The Knight of Pentacles is practical - he represents the physical actions that you must take to materialise your ideas. The suit of Pentacles is of Earth (matter) and the Knight brings Fire (action) to the equation. Without action on the material plane, ideas remain ideas and do not have the benefit of manifestation.
As this Knight is of the Earth, he also can represent one's health, or physicality. Taking actions towards improving and maintaining one's health is important.
Often the Knight of Pentacles is depicted as the only Knight whose horse is not in motion - but I have also seen many that are. Knights are always about movement, the Knight of Pentacles just moves more slowly and deliberately than the others. He is not driven by passion, emotion or ideas, but by creating a legacy that will withstand the test of time. He is not in a hurry, as perhaps are the other Knights.
